Recipe: Summer Breakfast

Hope you had a great 4th of July! We celebrated Independence day with fireworks, fireflies, baseball, U.S. Flag waving toddlers, swimming, family, and of course a whole lot of great food : ) Here’s what our host Melissa served for breakfast:

quiche is one of my favorite meals for overnight guests because it’s a great “make ahead” meal, you can serve hot, without creating a mess or taking up time. Just pop it in the oven the morning of to finish heating and add some fresh fruit…beautiful, tasty, and filling.

Spinach, Potato, Bacon Quiche Recipe

6 Eggs
1 1/2 Cups of milk
18 Slices of pre cooked bacon
2 Cups spinach
1 Cup cheddar cheese
2 Cups of shredded potatoes
pre-made Pie crust

Roll out your pre-made pie crust in a pie pan..I used a foil pan so I can just throw it away after we are done-
easy-peezy! Place eggs, milk, salt and pepper in a large mixing bowl and beat. Chop spinach and then add bacon to the spinach and blend. Place shredded potatoes on the bottom of the rolled out crust in the pie pan. Place spinach and bacon mixture on top of the shredded potatoes. Pour egg mixture over the top. Top it with cheese and Bake at 375 degrees for 35-40 minutes or until golden brown!
