Recipe: Katie’s Spicy Chili

With so many chili recipes floating around out there what you’re really wondering is, is this one any good? The answer? I think so. The problem is there are just as many chili taste preferences as there are recipes. Tomato-y? Creamy? Meaty? light color? Dark color? White color? This one tastes close to my mom’s (which is tomato-y and garlicy…how could it not be?) with a few of my own chili loving tweeks…meatier, spicier, less tomato…let me know what ya think. It’s super easy, and for a more budget friendly, healthy version, leave the meat out. Just as delicious.


Spicy Chili:

4 cans stewed diced tomatos
2 cans red kidney beans (drained)
1-2 cans black beans (drained)
1 tsp salt (add more to taste)
pepper to taste
2 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
sprinkle with cayenne pepper to taste (I like it spicy)
a pinch or two chili flakes
1 tbsp olive oil
1 lb ground beef
1 lb chopped stew meat (steak)

Brown ground beef and or steak in a little olive oil and cayenne pepper. Meanwhile add all other ingredients to a crock pot or chili pot on the stove. After meat is browned, add to mixture in pot (including the juices!) and bring to a boil. Once boiling, reduce heat to a slight simmer and cook all day or overnight. Enjoy with some sour cream, cheddar cheese, and corn bread.
